– We put these Mr. Potato Head glasses on Bently. It was a very entertaining 5 minutes.

– Buppa started getting into potty training a lot more this week. He even wore his big boy underwear twice (for a short amount of time) without having an accident!

– I got these cute little mason jar salt and pepper shakers. I love anything “mini”. Not sure what I am going to use them for just yet.

– We had two days of really nice weather this week. So, Landon and I spent some much needed time outside.

– Landon’s bathtub toy that I ordered with gift to grow points came in, and he loved it. Bently also thought it was pretty intriguing… But not enough to go in the water!

Cinnamon in my coffee?!

I was helping my very best friend clean her entire house one Saturday… It was early. I needed coffee, and she wanted to put cinnamon it in!

I am completely addicted to coffee.. (I’m not the only one, right? Right?)

I don’t put flavors in my coffee.. (Well, a vanilla iced latte is my only exception to that.)

I was VERY skeptical. I don’t like cinnamon. I know, I’m probably the only crazy one. Anyway, her house, her coffee.. I agreed with the promise of “regular” coffee if I didn’t like it with cinnamon.

THIS IS THE ONLY WAY I DRINK MY COFFEE NOW. It is absolutely delicious. It doesn’t taste like cinnamon at all. It makes cheap coffee taste ten times better. (Yes, I buy cheap coffee.. I drink too much to buy the expensive ones that wouldn’t “need” cinnamon, but I’d probably put it in them anyway.)

I put the cinnamon in after the coffee grinds. I just sprinkle some on top. We don’t measure in the south. This is how Heidi (the best friend EVER) did it. I’m not sure if it would be the same if you put it in your cup.

But, you should definitely try it!

Calzones Wednesday, Sep 12 2012

My husband has been casually mentioning calzones over the past few months.. So, I decided to try this recipe that I found on Pinterest. (I’m addicted, I know.)

Most of the time, recipes don’t work out perfectly for me… This one is no exception. Although, it was pretty delicious.

I used box pizza dough. (I’m such a cheater.) But, I think I am going to try to make my own next time…

I prepared the dough according to the directions on the box, and let it sit on the counter for about 20 minutes..

I split the dough in half between two baking sheets and flattened it out to make as big of a rectangle as I could without the dough being too thin. I layed aluminum foil on my baking sheets. (Mainly because they are extremely old and need to be replaced..)

Then, I put the pizza sauce in the middle..

Cheese, meat (pepperoni and sausage), and more cheese..

I had a lovely helper…

Then, I cut the dough that wasn’t covered by the pizza ingredients into strips and “braided” it over the filling.. It isn’t pretty, but it worked..

I baked it at 350 for about 25 minutes. The original recipe says differently, but the oven in this rent house is temperamental and I always have to reduce cooking time.

I had a terrible time trying to get these off of the aluminum foil. I wish I would have taken a picture… just trust me- it was bad. I recommend spraying your pan or aluminum foil for an easier time removing these things.

Anniversary trip Tuesday, Sep 11 2012 

This trip was not actually planned out by us for our anniversary.

My husband had to go to Bethesda, MD to see military doctors about a recent diagnosis. It just so happened that he was going to be there on our anniversary. I was initially upset about this since we had only been able to spend our first anniversary together. But, we found out that there was really no reason why we all couldn’t go. So, Landon and I tagged along and made a mini vacation out of it.

Might as well make the best out of it. Not to mention, there were no out of pocket costs involved.

We had to take a rental car. Landon loved this, and he still talks about it. Zachery and I, not so much. (At least we got a free upgrade and weren’t stuck in a Ford Focus!)

We found the Metro after we unpacked our luggage at the hotel. This was not a fun experience. Neither of us had ever rode the metro before… There is no type of “public transportation” where I am from.. (a rather small town in southern LA).

Anyway, we thought we figured it out (with some help), and took it to D.C.

NOT WHAT I EXPECTED. Honestly. Maybe it’s just because I’m from such a small town. But- it was a great experience, nonetheless.

Like I said, we thought we figured out the metro, but we didn’t. We didn’t put enough money on our cards. OF COURSE! And we had no cash. But, they let us though anyway… THANKFULLY.

…and we didn’t do that again!

We stayed in Bethesda the next few days. It was too much with a 2 year old.

It was so nice to have everything in walking distance.. restaurants, stores, Starbucks. Don’t laugh, this was a brand new experience for me!

Conquering my bathroom drawer. Monday, Sep 10 2012 

I was browsing Pinterest one afternoon for a few minutes. Ahhh, who am I kidding… It was probably 0100 and I had been on for hours. It’s addicting, I tell ya!

Anyway, I came across this website that shows you how to repurpose empty cardboard boxes (like the ones you probably have in your pantry) into a drawer organizer. GENIUS!

So, I started keeping every empty box. My husband loved this. (; (read; This irritated him to no end because he is a neat freak and couldn’t stand seeing them at the bottom of the pantry.)

Once Zachery couldn’t take it anymore, I cut the bottoms to fit my bathroom drawer. I measured the height of the drawer which was about three inches. So, I cut the boxes to be two and a half inches tall. I just measured from the bottom, drew a line around the box where I was going to cut, and then cut them with scissors. And then I put them back at the bottom of the pantry. HA. Just kidding, I put them in the “baby bed”. (The spare bedroom/storage area. I had a great Aunt who kept all of her “stuff” in an old baby bed. So, it’s kind of a joke in our family to call the spot in your house that you use as storage the “baby bed”.)

Anyway, once I thought I had enough boxes I tamed all this nonsense..

I took everything out and arranged my boxes in the drawer and then taped them together with clear tape so they wouldn’t move around…

Here is my counter in the process.. I always despise cleaning/organizing because you have to make a bigger mess than you already had in the process..

But, it was all worth it in the end because now my drawer looks a lot better!

I am thinking about eventually covering the boxes with paper to make it look even better. But, for now at least I can find what I need!

Red beans and rice. Sunday, Sep 9 2012 

My son, Landon, used to call this, “Ra Ra rice”. He actually still does even though he can pronounce it correctly now.

This is one of my favorite things to cook.. It’s so cheap and easy! It doesn’t take too much attention, but you do have to watch it.

I have never cooked for more than 4 people. I am sure my Granny and Mom use three to four times as much ingredients as I do. They like to cook for the whole town, but so do most Cajuns. This recipe makes enough for my family of three to eat it twice. Sometimes, I just add more beans on the day we have it for leftovers.

I open my three cans of red kidney beans (two dark, one light) with my non-electric can opener, Ahem, I could use an electric one., and empty them into my pot..

Then, I cut up my sausage. I prefer Savoie’s mild pork, but they don’t sell that here in NC. So, I settle for whatever I can find. I have used turkey, but it gives it a little bit of a different flavor. I just use one package of sausage and slice it…

And add the sausage to my pot… along with as much water as I can fit. Turn the burner on high. I also put my rice cooking at this point. I cook three cups of medium grain rice in a rice cooker.

Don’t forget to cut up some sausage for the kitties.. (My Mom’s poodle, Fifi, starts crying for her sausage as soon as she pulls out her electric can opener. It’s pretty ridiculous.)

Now for the seasoning. I just add salt and pepper. I don’t know how much. I “just put some”. This is how my Granny taught me to do it, and so that’s what I do. I haven’t ruined a meal yet!

STIR, STIR, STIR. You don’t have to stir constantly, and I don’t.. I take a break and poor myself a glass of wine. (;

Bring it to a boil…

I let mine boil for about 20 minutes or so, OR until it starts to thicken. Then, I bring the temperature down to about medium. REMEMBER TO STIR… Or it will stick to the pot.. and that’s not fun. I cook it for about another 20 minutes or so adding water if I feel like it’s getting too thick too fast. Then, I bring the temperature down to almost low and let it thicken to my liking. It’s not “supposed” to be watery at all. I don’t know if you can tell in the photo or not..

I leave it on low until my rice is done. And then we eat.. after moving a kitty from my chair.

Red beans and Rice
Ingredients;
3 cans of kidney beans
1 package of sausage
Salt
Pepper
Rice

Add beans, sliced sausage, and water to a pot. Season with salt and pepper. Boil for about 20 minutes, stirring occasionally. Bring heat down to medium and cook for another 20 minutes, stirring occasionally. Bring heat down to low and allow to thicken. Serve over rice.

Louisiana Saturday Night! Saturday, Sep 8 2012 

Okay, so.. I won’t be having a traditional Louisiana Saturday Night. Hence; I’m in North Carolina, and it’s just not the same. I still haven’t completely got it through my thick Cajun skull that you can’t just buy liquor (pretty much) anywhere. Not to mention that the ABC stores close at 9pm. It’s craziness, I tell you!

I am totally jealous of anyone that is going to be in Death Valley tonight.

Who wouldn’t want to be there?! Some of my best memories of college were made in that stadium. And to think I don’t go to LSU for football… at first. There is just something about being in the student section of Tiger Stadium. It’s an experience like no other.

I am just lucky enough to be able to catch the game here in NC. So, I’ll be having as close to a Louisiana Saturday Night that a Cajun girl can have outside of LA!

High five! Saturday, Sep 8 2012

Here is my high five for Friday;

– My husband was off on Monday! Yay for Labor Day. As an active duty Marine on a reserve base, he doesn’t get quite as many days off… especially holidays. I am grateful I got this extra time with him.

– I only had to cook twice this week. This may not be a big deal to most people, but it was a nice break for me. I do actually like to cook, but it’s not always pleasurable to cook and watch a two year old at the same time. And, although the fact that I didn’t cook was great… It wasn’t because I didn’t want to.. It was more like I couldn’t. I poked myself in the eye on Tuesday night while having an allergy attack. No need to laugh, I know we’ve all done it. I guess I got myself really good because I basically couldn’t see all of Wednesday and most of Thursday. But, it’s completely better now after a visit to the doctor for some eye drops.

– I got a haircut! This almost didn’t turn out as good as it actually did. I am incredibly picky about my hair. I normally go months (I know. How crazy is that?!) without a haircut. But, I got one. It was only the third time someone other than my Nanny (godmother, aunt) cut my hair, and I almost remembered why! It was horrendous until another stylist stepped in and saved the day with a razor blade. I wish I had a better picture to show you…

– I got my new favorite drink from Sheetz twice this week. It’s basically red bull and flavoring. I like raspberry! I am fully aware that red bull is not necessarily good for you, but I’m obsessed, okay?!

– My son, Landon, finally got 5 stars for following the rules and got to pick from his treasure chest after a hectic week of him not listening. I will post on this more later, but basically he gets stars for following the house rules. If he has 5 at the end of the day he gets to pick from the treasure chest! Go, Landon! He was very excited for a truck and candy.
